PS40 X STILY MOTHERS DAY COCKTAILS

This Mother’s Day, we’ve partnered with Sydney’s Bar of The Year, PS40, to bring you four world-class, limited edition cocktails delivered to your door.

A gastro-chef trapped in a bartender’s body, Michael Chiem is a world-renowned mixologist known for cocktails that are days-long in the making – and ultimately challenge exactly what a ‘drink’ can be. To create this collection, Chiem has dug deep in his imaginarium (and also raided the PS40 archives) to bring the world his Sofa Series Vol 2: a mini cocktail menu especially designed for the Isolation soiree.

For this project, Chiem has taken the Negroni, the Espresso Martini, the Margarita and tiki classic the Zombie and given them the full PS40 treatment: sous-viding, freezing, straining and clarifying his potions before bottling them. Each cocktail is easy to prepare at home (just pour over ice), generous, and, most importantly, travels well - which means anyone with access to a handful of ice blocks can now fix their mother a universe-shattering drink.

“I’ve been working in hospitality venues from restaurants to nightclubs to hotels and small cocktail bars since I was 16 years old,” explains Chiem. “So if you cut me open I bleed good times, drinks and food.”

There are four cocktails in the family…

  1. Breakfast Negroni

The Mother's Day Breakfast Negroni is the ultimate Mother’s Day breakfast in bed. Four words: bitter, rich, banana bread. (Gin, Campari, vermouth, banana bread, coffee bean, tonka bean.) 

  1. Mandy Margs

Mandy Margs is a vibrant, aromatic citrus, mexican spiced-interpretation of the classic margarita.

“For the picante mums who like to get their daily intake of salt by enjoying a margarita or three. This drink was inspired by one of our favourite chefs Cristina Martinez who makes the most delicious lamb barbacoa tacos,” says Chiem. (Tequila, Mezcal, lime, barbacoa spices, mandarin, whey.) 

  1. The Africoola

The Africoola is a toasted, silky, marzipan interpretation of the Espresso Martini. “For mums who live life in the espresso lane, we’ve combined coffee forces to conjure up a take on the espresso martini like never before," says Chiem. "Mr Black cold brew coffee liqueur meets Coffee Supreme ‘Instant’, with a wack of native wattleseed… what could go right?” (Mr Black cold brew coffee liqueur, vodka, wattleseed & friends, young coconut, whey.)

  1. Corpse Recliner 

The Corpse Recliner is a tropical, tart and spiced-up interpretation of the classic tiki cocktail the Zombie.

PS40 won Time Out Sydney’s Bar of the Year this year – an award that “means everything” to Chiem - and it’s easy to see why.

As Time Out put it, “For these guys, waking up in the morning is another opportunity to continue redefining our perception of what a drink can be – and you don’t even need to be seated at the bar to appreciate their efforts.”

The bar’s monochrome fit-out, with the occasional pop of colour, allows the PS40 team to create without being confined to a genre. To come up this collection, for example, Chiem started by throwing some random ideas at his team, and ended up basing the cocktails on fictious characters. “Lots of research, testing and tweaking is involved,” says Chiem. “The trickiest part is being critical about yourself and the end product.”

Like every bar in Australia right now, PS40 is currently closed and Chiem’s brand new cocktail delivery service is standing in its place.

The upside is that cocktail-lovers around the country now have the opportunity to drink in his genius firsthand: his partnership with Sorry Thanks I Love You means that his work will be available insterstate for the first time ever.

“Just like many other businesses the future is not certain, but we are trying our best to adapt and continually do what makes us get up in the morning,” says Chiem.
