This rich, buttery honey is made from a cocktail of more than 150 wildflowers that grow on the shores of Lake Pedder in remote south western Tasmania. Drawing on the nectar of banksia, tea tree, button grass, melaleuca, and native peppermint, this sharp, smooth honey is the only Miellerie product not made from a single flower, and is instead naturally blended by the bees themselves.

Yves Ginat, who has been keeping bees since he was a teenager in Bourges, brings a very French approach to the apiary discipline. Combining organic and biodynamic beekeeping practices with his natural sensibility for the hierarchy and health of his hives, Yves makes sophisticated, complex honey from the nectar of some of the most remote wildflowers in Tasmania.
