Each time Four Pillars make a batch of gin, they find themselves with around three kilograms of organically grown oranges that have essentially been steamed in gin. The fruit is distilled with nine other botanicals for seven hours in the Four Pillars still, Wilma. Four Pillars knew that they needed to put the fruit to proper use, and thus this deliciously tangy orange marmalade was born. The Breakfast Negroni is even more decadent than Four Pillars’ straight marmalade, with an intensified richness. With the addition of a tiny bit of Campari, it’s just a little more bitter-sweet. Toast for the adventurous.

Four Pillars Gin

Four Pillars is a small Australian gin distillery in Healesville, Yarra Valley. They make a modern Australian style of gin with Asian spice, Mediterranean citrus, and native Australian botanicals. Using two copper pot stills, Four Pillars craft in batches of just 450 or 600 bottles.
