Mada wines is the love child of young gun winemaker Hamish Young. Hamish cut his teeth in fine winemaking in Canberra District before setting up this solo project. The wines are sourced from across various New South Wales wine regions, are expressive, exciting, delicious and a good bit edgy. This is prosecco from Hilltops region and a vineyard on the outskirts of the town of Young - while it's pretty straight up in style, Hamish manages to make it that much more interesting, a touch textural, a little savoury but retains that explosion of bubbles expected. “Our Property Glen Ewin Estate in the Adelaide Hills has a history of growing figs for 175 years. For the last 20 years we have grown them using organic management practices with the trees being spray free for that period and marketed as Willabrand. The figs are poached gently to extract the sweet fig aroma, essence, and earthiness. The gin botanicals and spirit show early on the nose with all the fig showing on the palate. Pour over ice and enjoy or add some lime for a flavor explosion, a perfect balance of sweetness and acidity which stretches the profile, then add a little good tonic to create the perfect G & T.”
