Cut horizontally by hand to enhance its texture, Huon Aquaculture's rich, silky salmon is the result of slow smoking the fish over red gum logs for up to 40 hours before marinating it in award-winning whisky from Hobart's Lark Distillery. It’s accompanied by a fillet of hot smoked trout, gently cooked in warm oak smoke, and a gourmet salmon, cream cheese and caper pate whose unassuming ingredients belie an almost inconceivable lavishness.
