These knives come to life in a shower of hot sparks in the Tharwa Valley Forgery just south of Canberra. Hand forged from sharp stainless steel, this wedge of a blade has been carefully designed for clean cutting – no matter the consistency of the fromage at hand. Each handle is made from a different piece of naturally shed red deer antler from the Hansen family venison farm, which is selected by Karim for its shape, girth and hue. Whether it’s up against a Somerset cheddar or a sticky Roquefort, this knife slices like a premeditated insult.
