NV L’Ouverture – Savart Champagne



When it came time for the Master Sommelier who chose this champagne for Sorry Thanks I Love You to describe it, there were no holds barred. “Like drinking from a mountain stream this champagne has crystalline clarity,” Seb Crowther said. Produced by Frederic Savart in Ecui, it graces the lists of restaurants like noma, Eleven Madison Park, and El Cellar de Can Roca.  It’s 100% pinot noir, officially registered as premier cru, and with only 20,000 bottles produced, Seb was lucky to get his hands on a tiny allocation to bring in to Australia.  “Full of flavour, the pinot noir character comes through with red cherry and a touch of blackcurrant. The palate has great texture, weight and dimension while remaining fresh from beautiful acidity.”
